Tuna Salad Recipe
· 2 cans tuna, drained (I prefer white albacore)
· ½ cup Homemade mayonnaise
· 3 medium-small celery stalks, diced
· 2 dill pickle spears, diced
· ¼ cup craisins, sweetened with apple juice, or unsweetened tart cherries
· 2-3 Tbsp yellow mustard
· 1-2 Tbsp dill pickle juice (this moisture will help moisten the dried fruit)
· ½ tsp dill weed
· salt and pepper (¼ tsp salt, ½ tsp black pepper)
· optional – hot sauce, chipotle powder, or cayenne powder for a little spice
Add the tuna to a mixing bowl and shred. Add the rest of the ingredients and stir. I like eating it on avocado slices (avocado toast), or veggie slices, such as cucumber, bell peppers, or celery. It’s good as a romaine lettuce wrap as well, or eat it like a normal tuna sandwich/wrap.
